A signature parfait available only this summer, generously using seasonal peaches and carefully balancing their aroma, texture, and acidity

To enhance the natural freshness of the peaches, we combined vanilla, champagne, yogurt, and fromage blanc to create a light yet complex flavor.
The glass contains a variety of textures, including peach blancmange, champagne jelly, compote, kudzu mochi, and marshmallows, and is topped with a peach-shaped fromage blanc mousse for a visually stunning presentation.

The tartness of raspberries and vanilla ice cream bring everything together, creating a luxurious treat where the aroma of peaches lingers until the very last bite.
