This creation features Kotoka, a premium strawberry variety from Nara grown by Iwai Farm, winner of the Gold Prize at the 4th National Strawberry Championship.
Its elegant aroma and rich sweetness take center stage in this special dessert.
Inside the glass, layers of diverse textures and flavors unfold—mousse, jelly, espuma, ice cream—each designed to showcase the fresh taste of Kotoka strawberries while adding depth and dimension.
The lower layers feature fluffy strawberry espuma, fresh strawberry slices, and a fragrant strawberry soup.
Above them, strawberry mousse with pistachio sponge, vanilla chantilly, shimmering strawberry jelly, and airy strawberry meringue create a beautifully layered harmony.
The top is finished with an almond tuile, strawberry ice cream, sweet chocolate décor, and delicate sugar work for an elegant presentation.
